Chipotle-Lime Cornish Game Hen

Cornish game hen is one of my favorite things to cook. Most stores carry them frozen, like little turkeys, but some actually have them in the butcher section. If you want to try to make the dish above you’ll need:

  • Lime
  • Cilantro
  • Eggplant
  • Mushrooms
  • Green Onion
  • Salt & Pepper
  • Grape Tomatoes
  • Chipotle (canned)
  • Cornish Game Hen

Preheat oven to 375°

The sides are easy to make. Just place the tomatoes, mushrooms (diced), eggplant (slices), and green onion in a bowl.  Sprinkle salt, pepper, and olive oil. Toss until everything is evenly coated. Move veggies to a large cookie sheet. Set aside.

Create a marinade from lime juice, chipotle peppers (about a tablespoon), and cilantro (chopped).  Butterfly the hen, split down the middle, and coat with marinade. Place the hen, meat side down, in a pan or cookie sheet and cover with aluminum foil.  Once oven is ready move the pan with marinated hen to the bottom rack.  Add the pan with veggies into the top rack at about the 10 minute mark.

After 25 minutes of cooking, uncover the Cornish game hen. Baste the hen with the juices, then leave uncovered for 5 to 10 minutes. Keep an eye out because the meat can easily become dry if left in for too long.  Remove veggies and Cornish game hen from oven and plate.

Add a small scoop of sour cream (or ranch) to the plate if the chipotle peppers are too spicy.
